I'm thinking I must not have something turned on. My control points only have the options to be moved in the X and Y.

Please see attached image.

There must be a way to move a control point in the Z? The options remain the same if I click "edit points"

You're only adjusting points of the shape, not its orientation in 3D space. That is done via the Position & Rotation parameters. This is a motion graphics app, not a 3D modeling app. Shapes are always 2D, even if they are floating in a 3D space.
