Complete Newbie (pre-warning before being shot down) - Log footage

Hi All,

So please forgive me before I get shot down here, I am a complete newbie to FCP/videography but trying to get deep into it and need some help if anyone can offer insights. I am trying to shoot in log format across multiple devises and have encountered some issues when shooting, importing to FCP and then exporting.

Camera stuff:

Mavic Air 2s - shooting MP4 in Log format - H.265.
Iphone 12 Pro Max - downloaded Filmic app to allow me to shoot Logv3 (although on the download it states HEVC, linear PCM) - again trying to shoot in log from my iphone (which apple states it can do). 
Insta360 one X2 - shooting in Log format but it is stating H.264 post download.

Basically, I encountered some problems originally using Iphone12 footage in FCP which I managed to (through some digging) rectify by changing the library type to wide Gamut HDR. Following that I then encountered the next issue on exporting to compressor and having to change the colour to 10bit (despite several warnings).

In short - it's a bit of a long shot, is there anyone on the forum currently using the above devises (or similar) for filming that could explain their workflow for camera set up (format), importing into FCP and then exporting. I am trying to ensure formats are consistent across devises (log) and codecs to create an efficient workflow that will make editing/colour grading easier, as well as final exporting.

If this has been asked before accept my apologies, and any advice or insights would be hugely appreciated.
