If I record a voice over to a clip on my timeline and I export it, to be used on another MacBook Pro, will I be able to split audio to mix both, the video ambience and the voice over track?

By default, it will export a stereo mix. If you assign the voice as a role and then do a multitrack output when exporting, the voice will be on another track so you can mix
