I recorded our church service (1hr & 15 mins. long) which included 6 teststimonies which I want to create 6 individual moves, they are recorded on a go pro hero3+ (so they are in 3.93 gb segments. - Which is the best workflow to accomplish this.

Lay it out in a project. Mark In and Out points for the first segment. Export it. You don't have to wait for the export to finish. Mark the second segment. Export it. Repeat.

Can I do multiple in & Outs in the same project and then when I export will it be a self-contained movie.

It gets confusing changing terms that are so set in to our brains. Yes you can have as many projects (sequences) in an event (bin!) you want. You can have as many events in a library you want.

My understanding is for legal reasons, they had to change what they call things as this was the first completely Apple written version of FCP. Sadly that doesn't make it any less annoying.
