Rookie here,
Is there a way to detect a person in the different raw footage and have a setting where they're always positioned in the middle of the frame? If so, how would I accomplish that?

There is a way to accomplish this, but it won't be easy.
There is this app called Mocha from Imagineersystems.com.
It is a planar tracker and you can use it to track and stabilize your footage.
Apart from doing many things automatic it will also require lots of laborious manual tweaking and in-depth knowledge, especially when a track starts to drift.
You can take a look at their website and follow some of the excellent video tutorials available there to see if this app will satisfy your needs.
You can also download a trial version which is limited to a 10 frame export, but as long as you stay inside the app you can see if it will work for you.
