Is there any way to change the default setting from "video" to "film"?

Also, can anyone explain the differences between these settings? I haven't really been able to find any documentation about these various settings, but nothing really explains what they do.

The different settings produce different looks in the dissolve. They use different blend modes and different opacity curves. Some are quite indistinguishable. If you have Motion you could open a copy in Motion and change the default setting.
