 I recently shot a interview and didn't add a backlight against a black background (idiot..). The subject's hair blends with the background. Are there any quick fixes in post or should I be looking into scheduling another interview?

Enhancing an image is one thing - adding information that wasn't captured is quite another. In circumstances like this you either reshoot, or go with the effect as a deliberate style. Can you push the contrast higher and have the subject's face looming out of the dark? What does it look like in monochrome?
If you're lucky, that sort of look might work, depending on the topic of the interview. Otherwise - my commiserations. At least you have an interview to cut, so you can reshoot just the bits you need and be very efficient with your subject's time.
(if it's any consolation, this week I have to reshoot an interview/demonstration: stage lighting looked a little odd in the camera monitor, turns out it's running at some awful weird frequency and I've massive rolling going on throughout the interview. On the wides NeatVideo cleans it up enough to use, but the close-ups are impossible. Reshoot! …and this time I'll take the laptop and check the rushes at full resolution.)
