two answers to this idea-
I don't think you'll see a touchscreen Mac anytime soon. Apple has been dismissive of the functionality- the ergonomics and how it would improve productivity. And as of right now I tend to agree.
I'm much more interested in iPads as additional input devices for non-standard tools. There's been a bunch of iPad screens which basically remap command keys, and I don't think there's much promise for that since as a touchscreen you have to look at it to see where the keys are. So it's not any better than a keyboard.
HOPEFULLY, like they did for LogicProX, Apple will release an app which you can use for non-keyboard optimized functions. Basically the same things that existing hardware control surfaces are used for now. Like colour correction, or audio mixing. If they did that I'd have an iPad sitting beside my keyboard all day long, and it wold see tons of use.

I'm currently using Splashtop ( www.splashtop.com ) app on an iPad mini with a bluetooth keyboard and I did a rough cut with just the keyboard shortcuts. My iMac is connected to a Pegasus R6 Thunderbolt RAID 6 so I use my laptop to remote login to edit when I step out of the office or just want a change of environment to edit. The lag is minimal.
Touch screen editing has it's quirks but the idea of not having carry around my RAID box and tethered via Thunderbolt cable while editing on MBP/iPad is worth it. You just need a fast and reliable internet connection. There's a $1.99/month for remote login via wifi.

Thats pretty cool but I"m just dreaming here, and its based upon the GUI of FCP and its looking and operating so much like the iMovie app. I just think apple built into FCPX a glimmer of where they plan on taking non-linear editing in the foreseeable future and thats finger swipe and tap editing on a tablet. Of course it will only happen when tablets get faster and actually replace laptops.

I just don't see tablets enabling either faster or better editing. Touch is too imprecise unless the targets are relatively large. I have a Wacom Cintiq, and strangely I've never tried to put the FCPX interface on it to see how it works. Even though I'd have the precision with the stylus, my arm would be moving more than using a mouse to do the same things. And while I've never learned to be a "keyboard only" editor, I've been forcing myself to learn the keyboard shortcuts I use most often.
For individual actions, anything accessible via a command key- a keyboard is going to be faster. for non standard input (again, Colour Correction and audio mixing) I see an iPad as a great input tool.
