I have seen a recording of a person jumping from a ramp, and doing some tricks as well. In the middle of the air the footage(person) stops. And then the camera starts panning around the person, doing a 360. When done, the film continuos in normal speed.

Do you have to place cameras around the person?

Yes. This is usually done by placing an array of stills cameras around the subject and triggering them simultaneously. The still images are strung together as an image sequence to create a video clip.

Have you done this?

Is it possible to place cameras around the subject and just hit record, and let them record the subject all the way down so you don't have to trigger them simultaneously?

Is there any guide on youtube or vimeo? Don't know what to search for. Haven't turned up any useful with my choice of words.

People have been using GoPro arrays for a couple of years now. Cheap, effective, and (in a housing) waterproof.

Never done it myself.

I haven't done it. It usually takes at least 60 cameras, more if you want more than a couple of seconds. In addition to triggering the cameras accurately, they have to be perfectly aligned vertically and spaced horizontally so the shot doesn't appear to go up and down or skip as it travels around the subject.
